1 medium cucumber (finely grated)
3/4 cup plain Greek yogurt
2 tablespoons chopped fresh dill
1 tablespoon lemon juice
1 clove garlic (minced)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cooked rotisserie chicken
1/2 red onion (diced)

Instructions

  1. Wrap grated cucumber in a paper towel and squeeze firmly to remove excess moisture.
  2. In a bowl, combine the squeezed cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Stir well.
  3. Shred the rotisserie chicken into bite-sized pieces.
  4. Add the shredded chicken and diced red onion to the tzatziki sauce. Toss until evenly coated.
  5. Serve as desired on pita, lettuce, crackers, or as a dip.
