Ingredients

8 oz noodles (Udon, Rice, or Spaghetti)
1/2 cup creamy natural peanut butter
3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon fresh lime juice
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1/4 cup reserved pasta water
Optional: red pepper flakes, sliced green onions, crushed peanuts

Instructions

  1. Cook noodles in a large pot of boiling water according to package directions.
  2. In a medium bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, and garlic.
  3. Reserve 1/2 cup of pasta water before draining the noodles.
  4. Return noodles to the pot and add the peanut sauce.
  5. Toss well, adding reserved pasta water 1 tablespoon at a time until the sauce is creamy and coats the noodles.
  6. Garnish with green onions and crushed peanuts before serving.

Notes

  • For a spicier kick, add a teaspoon of chili garlic sauce.
  • Store leftovers in an airtight container for up to 3 days.
