Ingredients

1 lb lean ground turkey or 90% lean beef
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp garlic powder
6 cups chopped romaine lettuce
1 cup black beans, rinsed and drained
1/2 cup corn kernels
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/2 cup Greek yogurt
1 tbsp lime juice
2 tbsp fresh cilantro, chopped

Instructions

  1. Brown the ground meat in a skillet over medium heat until fully cooked.
  2. Stir in chili powder, cumin, and garlic powder; remove from heat and let cool slightly.
  3. In a small bowl, whisk together Greek yogurt, lime juice, and cilantro to make the dressing.
  4. In a large bowl, combine romaine, beans, corn, tomatoes, and onions.
  5. Top the greens with the seasoned meat.
  6. Drizzle with the dressing and serve immediately.

Notes

  • To keep avocado from browning, toss it in extra lime juice.
  • For a vegan version, substitute meat with lentils and use almond-based yogurt.
