1 pound ground turkey
2 medium zucchinis
1 tablespoon olive oil
1/2 medium onion
2 cloves garlic
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/4 cup chicken broth
1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft, 3-4 minutes. Add garlic and cook 30 seconds.
  2. Crumble ground turkey into skillet. Cook 6-8 minutes, breaking it up, until fully browned.
  3. Add sliced zucchini to skillet. Cook 4-5 minutes until zucchini starts to soften.
  4. Sprinkle with oregano, salt, pepper, and red pepper flakes. Pour in chicken broth and stir.
  5. Reduce heat to low and simmer for 3-4 minutes.
  6. Sprinkle Parmesan cheese over the mixture. Stir until cheese melts and coats everything. Serve immediately.

  • For a creamier sauce, stir in a tablespoon of plain yogurt at the end.
  • This dish stores well in the fridge for up to 4 days and is great for meal prep.
