Ingredients

1 can (15 oz) chickpeas, drained and rinsed
3 tablespoons vegan mayonnaise
1 tablespoon Dijon mustard
1/2 cup diced celery
1/4 cup diced red onion
1 tablespoon fresh lemon juice
2 tablespoons fresh dill or parsley, chopped
Salt and pepper to taste
4 slices of whole grain bread
Lettuce and tomato for topping

Instructions

  1. Place rinsed chickpeas in a medium bowl.
  2. Mash the chickpeas with a fork or potato masher until desired consistency is reached (leave some whole).
  3. Add the celery, red onion, vegan mayo, mustard, lemon juice, and herbs.
  4. Mix thoroughly until all ingredients are well combined.
  5. Season with salt and pepper to taste.
  6. Assemble sandwiches by spreading the mixture on bread and adding lettuce and tomato.

Notes

  • For extra flavor, add a touch of garlic powder or smoked paprika.
  • Store leftovers in an airtight container for up to 4 days.
