Ingredients

1/4 cup chia seeds
1 cup unsweetened almond milk or coconut milk
1 tablespoon maple syrup or agave nectar
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Fresh berries for topping

Instructions

  1. In a medium bowl or glass jar, whisk together the chia seeds, milk, sweetener, vanilla, and cinnamon.
  2. Let the mixture sit for 5 to 10 minutes at room temperature.
  3. Whisk or stir the mixture again to break up any clumps of seeds.
  4. Cover the jar and refrigerate for at least 4 hours, or ideally overnight.
  5. Before serving, stir once more and top with your favorite fresh fruits or nuts.
