1 ½ teaspoons smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano or mixed herbs
½ teaspoon salt
¼ teaspoon black pepper
23 medium potatoes, washed and cut into chips
2 tablespoons olive oil, divided
500 grams lean beef mince (ground beef)
Lettuce, shredded
Cheese, shredded (dairy-free or regular)
Pickle slices
4 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon mustard (dijon or yellow)
1 teaspoon brine from the jar of pickles
½ teaspoon garlic powder
½ teaspoon smoked paprika

Instructions

  1. Mix the smoked paprika, 1 tsp garlic powder, onion powder, dried herbs, salt, and pepper in a small bowl. Set aside.
  2. Pat the potato chips dry. Toss in a bowl with 1 tbsp olive oil and half the spice mix. Cook on a baking tray at 200°C (390°F) for 30-40 mins (or air fry for 20 mins) until crispy.
  3. Heat the remaining 1 tbsp olive oil in a pan over medium-high heat. Cook the beef mince, breaking it apart. Once browned, add the remaining spice mix and cook until liquid evaporates.
  4. Make the sauce: whisk mayonnaise, ketchup, mustard, pickle brine, 1/2 tsp garlic powder, and 1/2 tsp smoked paprika in a bowl.
  5. Assemble bowls: Start with shredded lettuce, add potatoes, beef, cheese, and pickles. Drizzle with sauce and serve.
