1 cup buffalo sauce (store-bought or homemade)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
2 cups cooked rice (white or brown)
1 cup corn kernels (fresh, canned, or frozen)
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
2 green onions, sliced
1 avocado, sliced
1/4 cup creamy dressing or yogurt-based alternative
Fresh cilantro, chopped (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut chicken into bite-sized pieces and toss with oil, garlic powder, onion powder, paprika, salt, and pepper.
  2. Spread chicken on a lined baking sheet. Bake for 15-20 minutes until cooked through.
  3. Warm buffalo sauce in a small pan. Toss baked chicken in the sauce until coated.
