2 cups sweet potatoes (diced)
2 cups cooked chicken (shredded)
1 cup corn (frozen or canned, drained)
1 cup BBQ sauce
1 medium red onion (diced)
1 teaspoon smoked paprika
1 cup cheddar cheese (shredded)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons green onions (chopped)

Instructions

  1. Prep sweet potatoes, onion, and green onions. Shred chicken if needed.
  2. Heat oil in a large skillet. Cook sweet potatoes with spices for 10-12 mins until tender.
  3. Add red onion and corn. Cook for 3-4 mins until onion is soft.
  4. Stir in shredded chicken and BBQ sauce. Simmer covered for 5-7 mins.
  5. Sprinkle cheese over top. Broil for 2-3 mins or cover to melt on stove. Garnish with green onions.
