Ingredients

2 cups old-fashioned rolled oats
1/2 cup chopped walnuts or pecans
1 teaspoon baking powder
1.5 teaspoons ground cinnamon
1/2 teaspoon sea salt
2 cups unsweetened almond milk
1/2 cup maple syrup
2 large eggs
3 tablespoons melted coconut oil
2 teaspoons alcohol-free vanilla extract
1.5 cups fresh or frozen blueberries

Instructions

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease a 9×9 inch baking dish.
  2. In a large bowl, mix the oats, half the nuts, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the milk, maple syrup, eggs, melted coconut oil, and vanilla.
  4. Spread the oat mixture into the prepared baking dish. Top with the berries and the remaining nuts.
  5. Pour the liquid mixture over the oats. Gently shake the dish to help the milk settle into the gaps.
  6. Bake for 35-40 minutes until the top is golden and the oats are set.
  7. Cool for a few minutes before slicing and serving.

Notes

  • Use certified gluten-free oats if necessary.
  • Substitute applesauce for coconut oil for a lower-fat version.
  • Store leftovers in the fridge for up to 5 days.
