1 large red bell pepper – cut into 1-inch pieces
1 large orange bell pepper – cut into 1-inch pieces
1 red onion – peeled and cut into 1-inch pieces
1 medium zucchini – cut into 1-inch pieces
1 tablespoon avocado oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon kosher salt
1 pinch black pepper
12 oz chicken sausage – sliced into 3/4 inch rounds

Instructions

  1. Chop all vegetables into 1-inch pieces and place them in a large mixing bowl.
  2. Drizzle the vegetables with avocado oil and toss thoroughly to ensure they are evenly coated.
  3. In a separate small bowl, combine the garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Sprinkle the spice blend over the vegetables and toss to coat.
  5. Slice the chicken sausage into rounds and add them to the vegetable mixture, tossing once more to distribute spices.
  6. Preheat your air fryer to 390 degrees F and lightly spray the basket with cooking spray.
  7. Transfer the sausage and veggie mixture to the air fryer basket in an even layer.
  8. Cook for 10 minutes, shaking the basket halfway through to ensure even browning.
  9. Remove from the air fryer and serve immediately as is or over your favorite grain.
